Simply Sweet Chocolate Chip Cookies

Hey hey hey!! Long time no post! How dreadful of me! Anyhow... I've got something really simple for you today. Who does love a really sweet, nearly sinful chocolate chip cookie? I know I do. In case you're up for it, here goes... This is for you Andre and Kellie lol!

Ingredients

2 cups all purpose flour

1/2 teaspoon salt

1/2 teaspoon baking soda

3/4 cup margarine (melted)

1 cup brown sugar

1/2 cup white sugar

1 tablespoon vanilla extract

1 egg + 1 egg yolk

2 cups semisweet chocolate chips
Direction
1. Preheat oven to 325 degrees F.
2. Grease baking tray/s with butter.
3. Sift flour, baking soda and salt together then set aside until needed.
4. In a separate bowl, cream the butter, brown sugar and white sugar. Once the texture is creamy, mix in the    vanilla and eggs until smooth.
5. Mix into the above mixture the sifted ingredients until a thick creamy dough forms.
6. Stir in the chocolate chips by hand using a spoon.
7. Form about ¼ cup sized dough balls on spoon and place of the greased sheets. Ensure the cookies are at least 2-3 inches apart so that they do not stick together.
8. Bake for 15 minutes in the preheated oven. 
9. Allow the cookies to cool slightly on the baking tray (about 5 minutes), then use a food lifter to carefully remove them to the cooling racks.

Super simple Ferrero Rocher gelato

So I was watching a Ustream live chat with Holland Roden from Teen Wolf the other day, and she mentioned one of her favourite things was Ferrero Rocher gelato, and I fell in love instantly with the idea of making it. I fiddled with the idea in my head and struck gold. Here's a SUPER SIMPLE recipe for Ferrero Rocher gelato.


Ingredients 

2 cups heavy cream
1 (14 oz) can condensed milk
1 tsp vanilla extract
12 Fererro Rocher chocolates (individual)

Directions

1. Add vanilla to heavy cream and whip to stiff peaks in large bowl. 
2. Chop ferrero rocher into small pieces. (With food processor) 
3. Stir into condensed milk. 
4. Fold in whipped cream.
5. Pour into a 2-quart container and cover and freeze for 6 hours or until firm

4 ingredients, 5 steps. Legit that easy. No joke!

Chewy Brownie Bonanza in your mouth


  • As a known foodie, there's just one thing that absolutely goes without  saying, brownies are absolutely top tier dessert treat. TOP TIER people! But for all those who know the difference between chocolate cake and brownies, its all in the consistency. Brownies are suppose to be chewy and gooey and yummy. If its cakie, you've missed the mark, but if that's your thing, cool. But for those who like a solid, wonderful, chewy brownie bonanza in your mouth, you're going to want to try this recipe.
  • Ingredients:
  • 3/4 cup all-purpose flour
  • cup sugar
  • tablespoons cocoa
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • eggs
  • teaspoon vanilla
  • 1/2 cup chopped nuts or chocolates ( if you want to)

Directions:

1. Combine all ingredients and mix well.

2.  Pour into a greased or lined 8x8 or 9x9 pan and bake at 350 for 25 to 30 minutes

3. Cool, then cut.

Enjoy.

And that's it. Seriously that's it. If you wanna get a little naughty, you can add a little chocolate fudge frosting on top.

Cinnamon Biscottis

I've always been fascinated with Italian food and deserts. So when I thought I'd share one of my favourites, cinnamon biscottis. These are so delicious! Eat them by themselves or have with tea. Just enjoy eating.

Here's what you'll need and how you make them:

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup white sugar
  • 6 tablespoons butter
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 egg, beaten
  •  
  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon of butter to grease baking sheet

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease baking sheet with butter.
  2. Sift together the flour, 1 1/2 teaspoon cinnamon, baking powder and salt, set aside. In a medium bowl, cream together the 2/3 cup sugar and butter. Beat in 1 egg, egg yolk and vanilla. Stir in the dry ingredients.
  3. On a lightly floured surface, knead dough and form into a log . Place on the prepared baking sheet, form into a rectangle and flatten slightly. Brush with the beaten egg.
  4. Bake for 25 to 30 minutes in the preheated oven, until golden and firm to the touch. Cool for 15 minutes.
  5. On a cutting board, slice each log crosswise at a diagonal into 1/2 inch slices, using a serrated knife. Place back on the baking sheet, cut side down, and sprinkle with a mixture of the remaining cinnamon and sugar. Return to the oven for an additional 15 to 20 minutes, until toasted

Crazy about Pretzels

Pretzels are a good ole' American favourite and a favorite of mine too. I LOVE soft pretzels, hard pretzels!! Any type of pretzel! Pretzel mania!! Here's one of my favourite recipes for soft, yeast free pretzels

Ingredients

· 1/3 cup baking soda

· 5 cups water

· 1 1/2 cups all-purpose flour

· 1 1/2 cups whole wheat flour

· 1 teaspoon baking soda

· 1 cup buttermilk

· 1/4 cup honey

· 2 tablespoons kosher salt, for topping

Directions

1. In a non-aluminum stock pot, dissolve 1/3 cup baking soda in 5 cups water. Bring water to a boil, and then remove from heat. Preheat oven to 400 degrees F (200 degrees C).

2. In a large bowl, sift together all-purpose flour, whole wheat flour, and baking soda. Stir in buttermilk and honey until dough pulls together. Turn dough out onto a lightly floured surface, and knead briefly to form a firm dough.

3. Divide dough into 12 equal pieces. Roll each piece into a cylinder approximately 12 inches long. Form into classic pretzel shape. Pinch ends to seal. Dip pretzels in baking soda solution and then place on lightly greased cookie sheets.

4. Sprinkle pretzels with kosher salt, and bake in preheated oven until golden brown, about 10 minutes.

Classic Jamaican Dessert: Blue Drawers

Hello Friends!! I'm back!!!! Sorry for the terribly long hiatus, but school was bit challenging, but I'm back and I've got some wonderful, interesting posts ahead.

Today I had a shocking revelation which inspired today's post. I have a meeting and the theme is Jamaican, so I called around and for the life of me, could not find a bakery that did Jamaican desserts. Shocking no?

So what did I do? I called my grandmother, who was kind enough to share with me this recipe for a classic Jamaican dessert, Blue Drawers.

But what per se are these blue drawers? Blue Drawers, Duckunoo, or Tie Leaf is a boiled pudding of West African origin. Jamaicans are very fond of this starchy, green banana-based boiled pudding, which is enjoyed as a snack or dessert.

Now that we know what it is, here's what you'll need and what you'll need to do :)

INGREDIENTS :
  • 3 Cups Grated green Bananas
  • 1 Cup grated coconut
  • 2.5 cups grated sweet potatoes
  • 1 cup flour
  • 1 tsp. Baking powder
  • 1 tsp salt
  • 1 tsp vanilla
  • 1 tsp mixed spice
  • 2 cups coconut milk
  • 1 1/2 cups brown sugar
METHOD:
  1. Mix all ingredients together. Place one cup mixture into quailed banana leaves. Wrap and tie with string or banana bark. Put the small parcels into enough boiling water to cover, and cook for one hour.
This recipe should serve 8 and its a little different, so I hope you like it!!
